This recipe is easy. Too easy. Especially if you own a Vitamix.
Even better, this soup is as healthy as soups come.
Gluten free, vegan, sugar free, vitamin-rich, low glycemic, filling, you name it.
(Not to mention absolutely delicious)
-1 to 2 lbs asparagus
-1.5 cups vegetable broth
-Handful of cashews (1/4 cup?)
-Ground black pepper to taste
STEP 1 – Cook the asparagus in a bit of olive oil
STEP 2 – Put the asparagus in the blender
STEP 3 – Add vegetable broth
STEP 2 – Blend on low, slowly speeding up, until the asparagus is liquified
STEP 2 – Add cashews and black pepper
STEP 2 – Blend on “hot soup” mode or until the soup is warm
STEP 2 – Serve immediately!
This took me a grand total of 15 minutes? Most of which was watching asparagus cook and blenders go round. You can whip up a batch of this healthy green stuff on any busy day! Which makes it a miracle recipe for college kids like me.
